KANI SALAD
“Kani” is Japanese for crab.
This recipe is for a nice cold and very tasty salad that’s good for summer.
What You Will Need:
Dressing:
- Mayonnaise
- Rice Vinegar
- Paprika
- Salt
- Ginger Powder
- Sugar
Salad
- Mix Leaf, you’ll want something peppery and dark in colour for a nice balance of coulour
- Mango
- Carrots
- Cucumber
- Crab Sticks
- sesame oil or seeds
How To:
- mix mayonnaise, paprika, rice vinegar, sugar, ginger and salt and set aside. The flavour depends on your pallet, if you want it abit more spicy or sweet. I personally like it sweeter.
- grate cucumber, carrots, mango and torn crab sticks into strips.
- add all the salad and dress with the mayonnaise mixture.
- Finish off with sesame oil or better yet some toasted sesame seed
The salad is best kept chilled before serving.

LEEK AND POTATO SOUP
What You Need:
- Leeks
- Potato
- white onions
- garlic
- coriander
- parsley
- veg stock
- evaporated milk or cream
How To:
- Sautee garlic and onions until golden brown then add potato and leeks.
- When potato are translucent add chopped parsley and coriander. Season with salt and pepper then pour in veg stock and let it simmer.
- When leek and potato are cooked take it off the heat and let it cool down.
- Then using a hand blender puree the potato and leeks then bring back to the boil and add evaporated milk or cream and let it simmer for another 2 minutes.
This is best served with some fresh bread rolls.

During my recent trip to Asia (Manila) I was invited to watch the coronation night of the Miss Gay Philippines competition which was so much fun. One of the judges was Bernz Benedito who is one of the running representative for LADLAD a LGTB representative in the 2013 midterm election.
Personally I think this is a great step forward for the Philippines even though it is a strong catholic country, what we need to think of is what is the right thing to do to get the country revving and improving its image world wide. There’s 3 more days before the election and would strongly suggest to think hard on who you will vote for.

I WAS SCARED
Wednesday 3pm I am officially on holiday. Very excited as it is my first time to go to Iceland, there is something about cold countries that lures me to them (is it the fur, the layering or the snow) Anyway, our flight is not until Thursday 7.10 am so we need to be in the airport at a decent time. Rather than waking up at 2am and driving down to Luton airport (1 1/2 hours drive) I decided to book a night at a hotel… Hmmm choices, choice, choices Ibis, Holiday Inn, Premiere Inn oh and you have Travelodge £39 but if you book well in advance its only £19 BARGAIN!!!! plus onsite parking £2 for 24 hours and its only 3 miles from the airport. SOLD.
Then we get to the hotel first thing I noticed it was like the a scene from KIDULTHOOD some gangster kids smoking at the front of the hotel and that the parking is not well lit. I thought the kids was staying in the hotel but after fishing their cigarette they then just left. STRANGE. As you walk in the reception is on the first floor the desk was empty for at least 20 minutes and no way to call or bell them. So finally manage to check in.
The hall way was like a scene from a horror movie part of it has lights and some parts doesn’t. Tiles were missing, walls have water marks then we got in the room.
The minute I walked in I just wanted to ran away, shame that the other hotels in the area are fully booked. Then the bathroom tiles broken, moulds everywhere and what’s fascinating is when I open the bin there was an old toothpaste tube from previous guest. The bed was so uncomfortable and the pillows was so flat and small which looked weird on the bed.
Honestly, didn’t get any sleep as I was afraid that someone is going to come in and abduct us.
When we left in the morning again no one was manning the desk nor anyone in the office.
I know I only paid £19 but I’d rather they didn’t give you an early bird discount and give you quality night. For a company that continuously grow they need to look into getting the rest refurbished. Specially the ones that are convenient for airports and tourist grounds.
To the Travelodge CEO this is a cry for help…. How many more guest like feel like they’ve been robed in your Travelodge Luton Airport…
